鸿禧菇扒菠菜 Spinach in Oyster Sauce


材料:

菠菜 - 300克(把根部去掉;冲洗干净备用)
鸿禧菇 - 半包(把尾部切掉;冲水即可)

调味:

蚝油 - 3汤匙
糖 - 适量
清水 - 少许
芡粉水 - 少许
清油 - 少许

做法:

煮一锅开水;加入少许盐,味精,清油。等水开了,就把菠菜烫熟,捞起沥干上盘。
起油锅,把蚝油炒至冒泡;即可加入鸿禧菇一起快炒。
倒入清水和糖调味,然后勾芡并且淋上少许清油后就可以将汤汁淋在菠菜上。

小明小贴士:
由于菠菜含有很高含量的嘌呤,所以建议烫过菠菜的水就不要了。

Spinach - 300gm (remove roots; rinse well)
Fresh Mushroom - 1/2 packet (remove roots; rinse well)

Seasonings:

Oyster Sauce - 3 tbsp
Sugar - a pinch
Water - a little
Potato Starch Water Mixture - for thickening the sauce
Oil - a dash

Method:

Boil a pot of water, add in a pinch of salt, msg and a dash of oil in it.
Blanche the spinach in the water till cooked; drain it well and arrnage on plate.
Heat a little oil, fry the oyster sauce till it form tiny bubbles; add in the mushrooms and toss well.
Pour in some water and add sugar to taste.
Thicken the sauce, drizzle some oil into the sauce.
Pour this sauce over the spinach.
Serve hot.

Small Ming's Tips:

Spinach has a high content of Pureen, so do discard the water use to blanche the vegetables.
