蟹肉面线羹 Crab meat with Rice Noodle Soup


材料:

炸面线 4片
冰冻蟹肉 200克 (飞水,备用)
鹌鹑蛋 1盒 (大约18颗,煮熟,剥壳备用)
鸡汤 2公升
芫荽 适量 (切段)

调味:

胡椒粉,黑醋 适量
芡粉水 适量

做法:

将鸡汤煮滚,加入炸面线焖煮片刻。
把汤汁勾芡,把蟹肉和鹌鹑蛋加入再次煮滚即可。

吃的时候,加入胡椒粉和黑醋还有芫荽。

小明小贴士:

蟹肉飞水时候可以加入少许姜片,可以起到去腥的作用。

Ingredients:


Deep fried Rice noodle - 4pcs
Frozen Crab meat - 200gm (cooked briefly in hot water, drain well; set aside)
Quail Egg - 1 pkt (abt 18pcs, boiled and remove the shell; set aside)
Chicken soup stock - 2L
Chinese parsley - a handful

Seasoning:

White pepper powder, black vinegar - to taste
Potato starch water mixture - to thicken to soup

Method:

Boil the chicken soup stock, add in the crispy rice noodle to simmer for a while.
Thicken the soup with the potato starch water mixture.
Add in crab meat and quail egg and continue to bring to a boil for a while before serving.

Add in white pepper powder, black vinegar and chopped chinese parsley and enjoy this soup.

Small Ming's Tips:

Add a few slices of ginger in the water while cooking the crab meat can remove the frozen fishy smell of the crab meat.
