很喜欢今天介绍的汤水,简单易煮虽然清单但是很好味道。
记得我母亲以前炖汤的时候,用的是比较老的西洋菜,带有须根的。
煲好后,汤水成很淡很淡的绿色,有西洋菜的香味。
有肉香。非常好喝!

西洋菜鱼圆汤 Water cress with Fishball Soup
材料:
西洋菜 - 1-2把 (洗净/切成段)
鱼圆 - 1包 (大约10个)
枸杞子 - 1汤匙 (泡软备用)
江鱼仔汤 - 1公升
做法:
先将汤煮滚,把鱼圆加入,煮熟。
把西洋菜和枸杞子加入,烫熟即可。
*你也可以撒少许胡椒粉,加点葱花,让汤水更加美味。

西洋菜有清燥润肺的疗效。枸杞子有明目的疗效。适时加些中药到我们的餐饮当中,也是对我们身体的一种简单调理的生活方式。

Ingredients:
Watercress vegetables - 1-2 bunches (rinse well, cut into smaller length)
Fish ball - 1 packet (about 10 pcs, you may substitute with meat balls too)
Wolf Berries - 1 tbsp (soak till soft)
Ikan Bilis Soup - 1 L
Method:
Boil the soup, add in the fish ball and cook till the fish ball floats.
Add in watercress and wolf berries; remove from heat when the vegetables are cooked.
*for extra flavours, add a dash of white pepper powder and some chopped spring onions
Small Ming's Tips:
Watercress have the beneficial effect of cooling body, remove heatiness within the body. Wolf berries are well known for their good effect for keeping our eyes healthy.

香辣鲳鱼 Spicy Pan Fried Promfret
材料:
鲳鱼 - 1条 (洗净,抹少许盐)
酱:(预先伴均匀备用)
香茅 - 1根(切片,然后用手弄散成丝)
小辣椒 - 1条(切碎)
泰国柠檬叶 - 1片 (切丝)
蒜头 - 5个(切碎)
泰国柠檬汁 - 1/2碗
泰国椰糖 - 适量
做法:
先把鲳鱼煎到两面金黄,熟了即可。
把预先伴均匀的酱汁淋上鲳鱼就可以上桌了。

Pomfret fish - 1 whole (rinse well, rub a little salt over the fish)
Sauce: (pre mixed well and set aside)
Lemon grass - 1 stalk (sliced finely; use hand to rub it well to form shreds)
Little Chilli -1 pc (chopped finely)
Kaffir Leaves - 1 pc (shreds finely)
Garlic - 5 pcs (chopped finely)
Thai Lime Juice - 1/2 bowl
Thai Palm Sugar - to taste
Method:
Pan fry the fish on both sides, till golden brown, cooked.
Pour the pre-mixed sauce over it and serve.

Lemon grass is a aromatic herbs widely used in Asia. It has a soothing and calming aromatic effect, can be used to tea making, sweet soup or even a natural mosquitoes repellent.
