XO酱炒鲜墨鱼 / 小明皮蛋豆腐

XO酱炒鲜墨鱼 Stir Fry Squid with XO Sauce

材料:

墨鱼片 - 300克
西芹片 - 100克
辣椒末/蒜茸/姜茸 - 各1茶匙
葱白 - 2-3根

调味:

XO酱 - 2-3汤匙
酒 - 少许
上汤 - 半碗
糖 - 少许
米醋 - 半茶匙
芡粉水 - 少许

做法:

  1. 起油锅,然后把小料都爆香。
  2. 加入墨鱼片和西芹片爆炒。
  3. 当墨鱼片要熟之前把调味加入拌炒均匀。
  4. 最后下米醋,才勾芡即可。

Ingredients:

Squid slices - 300gm
Celery slices - 100gm
Chopped Chilli/Garlic/Ginger - 1tsp each
Spring Onion (white portion) - 2-3 pcs

Seasonings:

XO Sauce - 2-3 tbsp
Chinese cooking wine - a dash
Soup Stock - 1/2 bowl
Sugar - to taste
Rice Vinegar - 1/2 tsp
Potato Starch Water Mixture - for thickening the sauce

Method:

  1. Heat up the wok, oil lightly and stir fry the condiments until fragrance.
  2. Add in squid and celery slices and fry over high heat.
  3. When the squid is almost cook, add in the seasonings and mix well.
  4. Lastly add in rice vinegar and thicken the sauce with the starch mixture.
  5. Serve immediately.

小明皮蛋豆腐 / Century Egg with Bean Curd Salad

材料:

嫩豆腐 - 1盒(切丁)
皮蛋 - 1-2个(切丁)
肉松 - 2大汤匙
芝麻 - 1/2汤匙
葱花 - 1/2汤匙

调味:

金兰油膏 - 2-3汤匙
白糖 - 1汤匙
辣椒油 - 少许(可用辣椒末替代)
黑醋 - 少许

做法:

  1. 把豆腐丁和皮蛋丁摆在盘上。
  2. 淋上调味汁。
  3. 再撒上葱花和芝麻即可。

Ingredients:

Silken Bean Curd - 1 tub (cut into cubes)
Century Egg - 1-2 (remove shell, cut into cubes)
Pork Floss - 2 tbsp
Sesame seed - 1/2tbsp
Chopped Spring Onion - 1/2tbsp

Seasonings: (mix well)

Kim Lan Sauce - 2-3tbsp
Sugar - 1tbsp
Chilli Oil - a dash (can be replaced with chopped chilli)
Black Vinegar - a dash

Method:

  1. Arrange the bean curd and century egg on plate.
  2. Pour the seasoning sauce over the bean curd.
  3. Sprinkle the chopped spring onions and sesame seeds on top.
  4. Serve immediately.
