酸辣肉片 (开胃菜)
材料:
三层肉 - 400克 (用加入少许姜片葱段的水烫熟,切薄片)
小辣椒 - 1条 (切碎)
葱头丝 - 2汤匙
土芹 - 1棵 (切碎)
薄荷叶 - 少许
芝麻 - 1茶匙
花生碎 - 1茶匙
浓缩酸酐汁 - 适量
做法:
- 把所有材料伴均匀即可。

Sour Spicy Pork Belly
Ingredients:
Pork Belly - 500gm (cooked and sliced thinly)
Red Chilli - 1pc (chopped finely)
Shallot shreds - 2 tbsp
Local Celery - 1 stalk (chopped finely)
Fresh Mint leaves - a handful
Sesame Seeds - 1 tsp
Crushed peanut - 1 tsp
Lime Concentrate - to taste
Method:
- Mix and toss all ingredients well and serve immediately.

椰香海带绿豆汤 (消暑排毒甜汤)
材料:
绿豆 - 300克
海带结 - 10个(用热水泡软,在热水里头加1-2姜片可以去腥味)
椰糖 - 适量
水 - 适量
做法:
- 除了椰糖,把其他材料煲煮滚后,改用小火继续焖到海带非常软。
- 加入椰糖调味即可。

Green Bean and Kelp Sweet Soup (Dessert)
Ingredients:
Green Bean - 300gm
Dried Kelp knots - 10pcs (soak in hot water till soft, add 1-2slices of ginger to reduce the fishy smell)
Coconut Palm Sugar - to taste
Water
Method:
- Beside the sugar, add all ingredients into a pot and boil it.
- Turn down the heat and continue to simmer until the kelp is very soft.
- Add sugar to taste. Serve warm.
